beverage production. It is primarily derived from two natural sources: sugarcane and
sugar beets. Sugar is used extensively in various industries, including food and

preservative qualities, and ability to enhance flavour and texture.
How is Sugar Produced?
1. Extraction:
o From Sugarcane: Sugarcane is crushed to extract the juice, which is
then clarified, evaporated, and crystallized to produce sugar.
o From Sugar Beets: Sugar beets are sliced and soaked in water to
extract the sugar, followed by purification, evaporation, and
crystallization.
Refining:
The raw sugar is further refined to remove impurities and achieve the desired
level of purity. This process includes washing, filtering, and sometimes
bleaching to produce white sugar.
Sugar can be classified according to the size of the sugar grain or according to the
color of the sugar.
